Michelle Boykins was dreaming about marshmallows.
While Boykins wasn’t anti-marshmallow, let’s just say it wasn’t the type of confection she thought would permeate her dreams.
Boykins decided she needed to do something with marshmallows.
That something ended up being creating coffee-flavored marshmallows for a coffee show. The treats were such a hit that when one of the vendors opened a coffee shop a year later, Boykins’ marshmallows were on the menu.
That’s how Michelle’s Chocolate Laboratory came to be.

Today, Michelle makes small-batch chocolates, confections and pastries.
Boykins often sells her products at markets and pop-up shops or has them featured at wine pairings and other events. For special events like Valentine’s Day, she assembles special boxes with a variety of sweet treats.
“We believe that everybody deserves to have a treat,” Boykins said.
