Equipment

  • Mixing bowl
  • Rolling pin
  • Skillet or griddle

Ingredients

  • 2¼ cups all-purpose flour, plus more for kneading
  • 1 teaspoon salt
  • 3 medium sweet potatoes (2 cups), cooked and mashed

Instructions

  1. In a large mixing bowl, combine the flour and salt.
  2. Add in the cooked sweet potato (skin-removed) and stir until the flour is completely absorbed.
  3. Using your hands, knead the dough and add more flour if the mixture seems too wet or sticky.
  4. Once combined, allow the dough to rest for 5 minutes.
  5. Separate the dough into 10 portions and roll the portions into balls.
  6. Dust a flat surface liberally with flour.
  7. Using a rolling pin, roll each ball out until they are about ⅛-inch thick.
  8. Heat a nonstick skillet or griddle over medium-high heat and spray with cooking spray.
  9. Add a tortilla and cook for 1 to 2 minutes on each side.
  10. Flip the tortilla over with spatula once bubbles start to form.
  11. Stack each cooked tortilla and keep covered with a clean kitchen towel until ready to eat. Enjoy.
