Do barbecued ribs have to be slathered with sauce to be delicious? No. And Cooter Brown’s Rib Shack in Jacksonville proves it to a bunch of satisfied customers every day.
When Cooter Brown’s owners Barbara and Tim Johnson decided to flavor their ribs with dry rub instead of sauce, a lot of folks in the area didn’t have much experience with that form of barbecue, Tim says. But they caught on fast.
“They’re very tender,” Barbara says of the special dish. “They’ll fall off the bone. We don’t boil ’em; we don’t do anything like that. We just smoke ’em.”
