Recipe: Sweet Cornbread Muffins

Use plain cornmeal, preferably yellow, but not cornmeal mix. (Stacey Little/Southern Bite)
Remain calm, but sometimes I like sugar in my cornbread. Try this recipe before you tell me I can’t keep my Southern card.
Sweet Cornbread Muffins
Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes
Ingredients
- 2/3 cup all-purpose flour
- 1/2 cup plain yellow cornmeal – not cornmeal mix (white will work, too)
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup vegetable oil
- 1 egg, beaten
- 1/2 cup milk
Instructions
- Preheat oven to 400 degrees.
- Combine flour, cornmeal, sugar, baking powder and salt in a medium-sized bowl.
- Add oil, egg and milk.
- Stir just until lumps are gone.
- Pour into a greased muffin pan and bake for 15 to 20 minutes or until golden brown on top.
