Bud Skinner is a self-taught seafood chef and is turning out remarkable dishes at Jubilee Seafood in Montgomery.
Skinner loves taking fresh fish and creating something special.
One of those dishes is the Sautéed Red Snapper, a meal featuring American red snapper topped with fresh blue Gulf crab meat relish. It has landed on the Alabama Tourism Department’s list of 100 Dishes to Eat in Alabama.
Like most other restaurants, Skinner’s has struggled during the pandemic but two large party rooms adjacent to his restaurant have allowed him to stay open with social distancing measures and he’s been able to retain all his employees.
