Nancy Everhart grew up hearing how much everyone loved her mother’s chicken salad.

She also grew up in the kitchen cooking with her mother. So when it came time for Everhart to start her own business, she knew it would involve cooking.

Nancy’s Lunchbox in Rainsville has since become a favorite lunch spot or a place to grab a quart or a pint of chicken salad, tuna salad, pimento cheese or pastas to carry to the lake or to have on hand at home.

Oh, and that chicken salad is Everhart’s mother’s recipe. It’s the star of the Chicken Salad Croissant that is on the Alabama Tourism Department’s list of 100 Dishes to Eat in Alabama.

Nancy’s Lunchbox is a popular place to grab lunch or order sandwich spread by the pint or quart. (contributed)
